Ingredients
- 1 band soba noodles
- 1 jalapeño seeded, minced
- 1 small onion minced
- 1 handful spinach or kale
- 1/2 carrot shredded
- 1/4 cup shredded chicken optional
- 2 stalks green onions optional
- 1 Tbsp garlic minced
- 2 tsp miso
- 4 Tbsp soy sauce
- 2 tsp sesame oil
- 2 tsp rice vinegar
- 1/2 tsp white pepper
- 1 tsp honey optional
Instructions
- Boil noodles in water until slightly undercooked.
- In a bowl whisk together miso, sesame oil, soy sauce, rice vinegar, white pepper, and honey.
- Using a pan sautée onions, jalapeño, carrots, and spinach until onions are translucent. Add sauce and cook for 1 1/2 minutes, then toss in noodles and cook for another minute. Serve and enjoy!
