Ingredients

  • 1/3 cup rice vinegar
  • 2 large carrots peeled and chopped
  • 2 Tbsp ginger minced
  • 1 lime juiced
  • 1 1/2 Tbsp honey
  • salt to taste
  • pepper to taste

Instructions

  • Blend everything until smooth.
  • Serve over a bed of leafy greens and fresh vegetables.
  • Will last in the refrigerator for about 1-2 weeks.
