- Cutting Board
- 1/3 cup olive oil
- 1/3 cup rice vinegar
- 2 large carrots peeled and chopped
- 2 Tbsp ginger minced
- 1 lime juiced
- 1 1/2 Tbsp honey
- salt to taste
- pepper to taste
- Blend everything until smooth.
- Serve over a bed of leafy greens and fresh vegetables.
- Will last in the refrigerator for about 1-2 weeks.
