  • 1 can chickpeas drained and rinsed
  • 2 Tbsp mayonnaise
  • 1 tsp Dijon mustard
  • ½ garlic clove minced
  • 1 green onion chopped
  • 2 Tbsp cilantro chopped
  • 2 Tbsp lemon juice
  • sea salt to taste
  • freshly cracked black pepper to taste
  • bread toasted

Sandwich Optional Ingredients

  • red onion thinly sliced
  • English cucumber thinly sliced
  • tomatoes thinly sliced
  • sea salt to taste
  • freshly cracked black pepper to taste


  • In a food processor, combine the chickpeas, mayo, Dijon mustard, garlic, green onions, cilantro, lemon juice, and salt and pepper. Pulse until combined, but do not puree. If you don’t have a food processor add all these ingredients to a bowl and mash with a fork.
  • Toast bread and assemble sandwich to your liking.
