  • 3 cups tomaotes
  • 1 cup feta crumbled
  • 2 cloves garlic minced
  • 4 Tbsp olive oil
  • 1/2 cup balsamic vinegar
  • 1 tsp fresh cracked pepper
  • 2 Tbsp basil chopped
  • 1 Tbsp brown sugar

Optional Ingredients

  • 1/2 onion sliced
  • 1 whole shallot sliced
  • 1/2 cup fennel bulb sliced


  • Preheat oven to 350. On a lined sheet tray add tomaotes, feta, olive oil, pepper, and basil and roast for 35-45 minutes.
  • Heat balsamic and brown sugar in sauce pan until reduced by half.
  • Pull out of oven and transfer tomaotes and feta into a serving dish. Then drizzle balsamic reduction over tomaotes and feta. Serve and enjoy
