Ingredients
- 3 cups tomaotes
- 1 cup feta crumbled
- 2 cloves garlic minced
- 4 Tbsp olive oil
- 1/2 cup balsamic vinegar
- 1 tsp fresh cracked pepper
- 2 Tbsp basil chopped
- 1 Tbsp brown sugar
Optional Ingredients
- 1/2 onion sliced
- 1 whole shallot sliced
- 1/2 cup fennel bulb sliced
Instructions
- Preheat oven to 350. On a lined sheet tray add tomaotes, feta, olive oil, pepper, and basil and roast for 35-45 minutes.
- Heat balsamic and brown sugar in sauce pan until reduced by half.
- Pull out of oven and transfer tomaotes and feta into a serving dish. Then drizzle balsamic reduction over tomaotes and feta. Serve and enjoy
