  • 1/4 of a Thinly Sliced red onion
  • 1/2 of a medium size cucumber thinly sliced
  • 1/2 cup of quarter Cherry tomatoes
  • Dressing
  • 1/4 cup fresh lemon juice
  • 1 small garlic clove grated
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon sea salt more to taste
  • Freshly ground black pepper
  • 1/2 teaspoon honey or maple syrup optional
  • 1/4 to 1/3 cup extra-virgin olive oil
  • 1/2 teaspoon fresh or dried thyme optional

Instructions

  • Whisk together everything and toss over mixed greens and veggies
