  • 1 cup sun dried tomatoes
  • 1/2 cup walnuts or any nut of choice and you can toast the nuts for added depth of flavour.
  • 4 cloves garlic
  • 1/2 cup parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup olive oil

optional ingredients

  • 1/4 tsp Chili flakes
  • 1/4 cup roasted red peppers


  • In a food processor add all ingredients except for olive oil.
  • Blend all ingredients until well incorporated then slowly add olive oil while still blending.
  • Once at desired consistency and store in an air tight container in fridge for up to a week.
  • Serve as a marinade for fish, meat, or vegetables. Can be used as a sauce over pasta, or rice. This pesto is a great addition to advance any dish.
