Ingredients
- 1 cup sun dried tomatoes
- 1/2 cup walnuts or any nut of choice and you can toast the nuts for added depth of flavour.
- 4 cloves garlic
- 1/2 cup parmesan cheese
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup olive oil
optional ingredients
- 1/4 tsp Chili flakes
- 1/4 cup roasted red peppers
Instructions
- In a food processor add all ingredients except for olive oil.
- Blend all ingredients until well incorporated then slowly add olive oil while still blending.
- Once at desired consistency and store in an air tight container in fridge for up to a week.
- Serve as a marinade for fish, meat, or vegetables. Can be used as a sauce over pasta, or rice. This pesto is a great addition to advance any dish.
