Ingredients

Noodle Salad Ingredients

  • 2 cups udon noodles
  • 1/2 cup carrots shredded
  • 1/2 cup purple cabbage shredded
  • 1/2 cup red bell pepper sliced
  • 1/4 cup green onions chopped
  • 1/4 cup peanuts rough chopped
  • 1/4 cup cilantro chopped
  • 1 cup shrimp optional

Peanut Dressing

  • 1-2 Tbsp peanut butter
  • 1/2 cup olive oil
  • 2 Tbsp soy sauce
  • 2-3 Tbsp rice wine vinegar
  • 1 tsp Garlic chili paste
  • 1 Tbsp lime juice
  • 1 Tbsp honey
  • 1 Tbsp water

Instructions

  • In a bowl whisk together all peanut dressing ingredients until smooth and creamy.
  • Prepare udon noodles according to package. Prepare all your vegetables. If using shrimp cook shrimp and let cool.
  • Mix together everything (udon noodles, vegetables, shrimp, peanuts, and peanut sauce) in a bowl. Serve and enjoy!
