Ingredients
Noodle Salad Ingredients
- 2 cups udon noodles
- 1/2 cup carrots shredded
- 1/2 cup purple cabbage shredded
- 1/2 cup red bell pepper sliced
- 1/4 cup green onions chopped
- 1/4 cup peanuts rough chopped
- 1/4 cup cilantro chopped
- 1 cup shrimp optional
Peanut Dressing
- 1-2 Tbsp peanut butter
- 1/2 cup olive oil
- 2 Tbsp soy sauce
- 2-3 Tbsp rice wine vinegar
- 1 tsp Garlic chili paste
- 1 Tbsp lime juice
- 1 Tbsp honey
- 1 Tbsp water
Instructions
- In a bowl whisk together all peanut dressing ingredients until smooth and creamy.
- Prepare udon noodles according to package. Prepare all your vegetables. If using shrimp cook shrimp and let cool.
- Mix together everything (udon noodles, vegetables, shrimp, peanuts, and peanut sauce) in a bowl. Serve and enjoy!
