Ingredients
- 2 cups shrimp peeled and deveined
- 1 bell pepper sliced
- 1 onion sliced
- 3 cloves garlic minced
- 2 Tbsp lime juice
- 4 cups leafy greens of choice
- 1 cup cherry tomatoes quartered
- 1 cup cucumber diced
- 1 avocado sliced
- 1 Tbsp olive oil
Fajitas Spice Mixture
- 2 tsp chili powder
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp oregano
- 1/4 tsp cayenne powder
Optional Ingredients
- 2 cups cooked quinoa
- cheese or choice
- sour cream
Instructions
- In a small bowl mix together all the fajitas spice ingredients.
- In a bowl add your deveined shrimp and coat with olive oil and some of the fajita spice mixture. Set aside and let marinate while you prep the rest of the ingredients.
- Heat a skillet over medium high heat and add oil. Once hot, sear your shrimp about a minute on each side or until they are cooked. Once the shrimp are cooked, take them out of the pan and set them aside.
- In the same pan, add the sliced bell peppers, onions, minced garlic, and a little bit of the fajita spice mixtures. Sauté until the onions have become translucent.
- Add the cooked shrimp back into the pan with the peppers and onions and turn off the heat. Add lime juice on top of the shrimp, peppers, and onions.
- In a bowl, layer all the remaining ingredients including your onions, peppers and shrimp. Serve and enjoy
