Ingredients

  • 2 cups shrimp peeled and deveined
  • 1 bell pepper sliced
  • 1 onion sliced
  • 3 cloves garlic minced
  • 2 Tbsp lime juice
  • 4 cups leafy greens of choice
  • 1 cup cherry tomatoes quartered
  • 1 cup cucumber diced
  • 1 avocado sliced
  • 1 Tbsp olive oil

Fajitas Spice Mixture

  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/4 tsp cayenne powder

Optional Ingredients

  • 2 cups cooked quinoa
  • cheese or choice
  • sour cream

Instructions

  • In a small bowl mix together all the fajitas spice ingredients.
  • In a bowl add your deveined shrimp and coat with olive oil and some of the fajita spice mixture. Set aside and let marinate while you prep the rest of the ingredients.
  • Heat a skillet over medium high heat and add oil. Once hot, sear your shrimp about a minute on each side or until they are cooked. Once the shrimp are cooked, take them out of the pan and set them aside.
  • In the same pan, add the sliced bell peppers, onions, minced garlic, and a little bit of the fajita spice mixtures. Sauté until the onions have become translucent.
  • Add the cooked shrimp back into the pan with the peppers and onions and turn off the heat. Add lime juice on top of the shrimp, peppers, and onions.
  • In a bowl, layer all the remaining ingredients including your onions, peppers and shrimp. Serve and enjoy
