  • 1 avocado
  • 2 cloves garlic
  • 1/4 cup cilantro roughly chopped
  • 1/4 cup soaked cashews
  • 1 Tbsp lime juice
  • 3 Tbsp olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • water for thinning


  • In a food processor, blend all ingredients together until smooth. Slowly add water until desired consistency. Make it thin for dressing or keep it thick for dipping.
