Ingredients

  • 3 medium tomatoes diced
  • 15 oz black beans drained and rinsed
  • 15 oz black-eyed peas drained and rinsed
  • 1 1/2 cups sweet corn
  • 1 bell pepper diced
  • 1 jalapeño diced
  • 1/3 cup red onions diced
  • 1 ripe avocado diced
  • 1/3 cup cilantro chopped

Cowboy Caviar Dressing

  • 1/3 cup olive oil
  • 3 Tbsp lime juiced
  • 2 Tbsp red wine vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder

Instructions

  • In a bowl whisk together all dressing ingredients.
  • In a larger bowl mix together all ingredients including the dressing.
  • Let chill in the fridge for one hour. Serve and enjoy.
