Ingredients
- 3 medium tomatoes diced
- 15 oz black beans drained and rinsed
- 15 oz black-eyed peas drained and rinsed
- 1 1/2 cups sweet corn
- 1 bell pepper diced
- 1 jalapeño diced
- 1/3 cup red onions diced
- 1 ripe avocado diced
- 1/3 cup cilantro chopped
Cowboy Caviar Dressing
- 1/3 cup olive oil
- 3 Tbsp lime juiced
- 2 Tbsp red wine vinegar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp garlic powder
Instructions
- In a bowl whisk together all dressing ingredients.
- In a larger bowl mix together all ingredients including the dressing.
- Let chill in the fridge for one hour. Serve and enjoy.
