Ingredients

  • 2 seedless cucumbers chopped into 1 inch bites
  • 1/2 tsp salt
  • 2 1/2 tsp cane sugar
  • 4 tsp soy sauce
  • 2 Tbsp rice vinegar
  • 2 tsp sesame oil
  • 1/4 small red onion sliced
  • 2-4 cloves garlic finely chopped
  • 2 1/2 tsp toasted sesame seeds
  • a small handful of chopped cilantro optional
  • 2 tsp chili oil optional

Instructions

  • Add all ingredients into a bowl and mix well. Set in refrigerator for 1-2 hours before serving. Serve as a side dish.
