  • 1 whole chicken
  • 4 Tbsp butter soften
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp parsley dried or fresh
  • 1 tsp thyme dried or fresh
  • 1 tsp oregano dried or fresh


  • carrots chopped
  • celery chopped
  • onion chopped
  • lemon sliced in half


  • In a bowl add all the ingredients minus the chicken and mix together.
  • Add the chicken to a roasting pan and lather the butter herb mixture over chicken
  • Optional ingredients can be stuffed in the chicken cavity, or on the bottom of the pan.
  • In a preheated oven of 375F cook chicken for 1 hour. Internal temp should be 160 degrees.
