  • 1 Tbsp olive oil
  • 1 can coconut milk
  • 6-7 small to medium potatoes halved or quartered
  • 2 chicken breast 1 inch cubes
  • 1/2 medium onion chopped
  • 1 inch ginger minced
  • 1 bag frozen broccoli
  • 4 cloves garlic minced
  • 2 Tbsp cumin
  • 2 Tbsp coriander
  • 2 tsp red pepper flakes
  • 3 cups broth
  • 2 tsp salt
  • 2 tsp pepper

Instructions

  • Add all ingredients into a crock pot and cook on low for 6 hours or high for 3.
