Ingredients
- 1 can chickpeas drained and rinsed
- 2 Tbsp mayonnaise
- 1 tsp Dijon mustard
- ½ garlic clove minced
- 1 green onion chopped
- 2 Tbsp cilantro chopped
- 2 Tbsp lemon juice
- sea salt to taste
- freshly cracked black pepper to taste
- bread toasted
Sandwich Optional Ingredients
- red onion thinly sliced
- English cucumber thinly sliced
- tomatoes thinly sliced
- sea salt to taste
- freshly cracked black pepper to taste
Instructions
- In a food processor, combine the chickpeas, mayo, Dijon mustard, garlic, green onions, cilantro, lemon juice, and salt and pepper. Pulse until combined, but do not puree. If you don’t have a food processor add all these ingredients to a bowl and mash with a fork.
- Toast bread and assemble sandwich to your liking.
