Ingredients
- 4 cups brussels sprouts shredded
- 1 cups cucumber shredded and liquid squeezed out
- 1/4 cup almonds sliced
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 - 1/2 cup cranberries dried
- 1-2 Tbsp hemp seeds
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 tsp honey
- Pinch salt
- Pinch black pepper
- 1 clove garlic minced or paste
- 1/2 - 1 Tbsp brown mustard
Instructions
- In bowl whisk together olive oil, red wine vinegar, honey, salt, pepper, garlic, and mustard. Add the remaining ingredients Brussels sprouts, cucumber, almonds, pumpkin seeds, sunflower seeds, cranberries and hemp seeds to the bowl and mix well.
- Serve and enjoy!
