  • 1/4 cup cherry tomatoes quarter
  • 1/4 red onion sliced
  • 2 small carrots sliced
  • 1 small cucumber sliced

Creamy Lemon Dressing

  • 1/4 can chickpeas drained
  • 1 lemon juiced
  • 1 clove garlic
  • pinch salt to taste
  • pinch black pepper to taste
  • 1/4 cup olive oil
  • splash apple cider vinegar


  • Prep all salad ingredients and place into a bowl.
  • In a food processor add all salad dressing ingredients and blend until smooth.
