Ingredients
- 2 cans green jackfruit in water brine drained, rinsed, and chopped
- 1 Tbsp olive oil
- 1/2 small onion sliced
- 4 cloves garlic minced
- 1/2 cup broth
- 1/2 lime juiced
- 2 tsp chili powder
- 2 tsp cumin
- 1 tsp smoked paprika
- 1/4 tsp salt
For the Tacos
- corn tortillas
- red onion Finley chopped
- cilantro Roughly chopped
- lime wedges
Instructions
- Heat oil in a large skillet over medium high heat. Add the onions and garlic and saute for about 5 minutes until onions have softened.
- Add the chopped jackfruit, broth, lime juice and all the spices to the pot and cover. Reduce heat and let simmer until jackfruit softens and about 1/2 the liquid is gone. About 4-5 minutes.
- Take a potato masher and smash all the jackfruit up for that shredded texture. Continue cooking until all the liquid is gone.
- Turn up the heat and cook until jack fruit gets a nice crisp and color to it.
- Warm up your shells and add your jackfruit taco mixture on each tortilla and top with onions cilantro and a squeeze of lime. If you want you can add hot sauce or your favorite vegan sour cream. Serve and enjoy.
