Ingredients
- 16 oz dry beans of your choice and soaked overnight
- 4 cups water
- 1 smoked ham hocked optional but does add maximum flavour
- 1 small onion chopped
- 2 small carrots chopped
- 3 celery chopped
- 1/4 cup tomatoes purée
- 2 Tbsp cumin
- 1 tsp chili
- 3 tsp garlic powder
- 2 tsp onion powder
- 2 tsp parsley
- salt to taste
- pepper to taste
- 2 cups rice uncooked washed
- 4 cups water
Instructions
- In a crockpot add beans, water, and ham hock and cook on high for 4 hours.
- After 4 hours add onions, carrots, celery, tomato sauce and spices and cook on low for 2 more hours or until beans are soft.
- In a pot over medium high heat add washed uncooked rice and water and bring to a boil. Once at a boil either turn off or turn very low and cook for 20 minutes.
- Serve beans over rice and enjoy!
