Ingredients
- 4 skinless boneless chicken breasts, cut into 1-inch cubes ( you can use veggies instead of chicken)( like mushrooms, eggplant, zucchini,)
- 1 tablespoon honey or maple syrup
- 4 garlic cloves crushed
- 1- inch piece of fresh ginger root finely chopped
- 2 green chilies finely chopped
- juice of 2 limes
- Grated zest of 1 lime
- 1/4 cup rice wine vinegar
- 2 tablespoons sweet chili sauce
- 1/4 cup soy sauce
- pinch of turmeric
Instructions
- Place all the marinade ingredients in a bowl and mix together well. Add the chicken, then cover and let it marinate in the fridge for at least 8 hours if not longer. (longer you let it sit the better it will taste)
- Remove the chicken cubes from the marinade and thread them on skewers. Heat a barbecue or a ridged grill pan until smoking. Add the skewers and cook for 8 to 10 minutes, turning them regularly and brushing liberally with the marinade. Serve hot from the grill with a salad.
