Ingredients

  • 2 cups qunioa
  • 1/2 cup zucchini
  • 1/2 cup broccoli
  • 1/4 cup cherry tomato’s
  • 1/4 cup red onions
  • 1/4 cup mushrooms
  • 1/2 cup feta cheese
  • 1 Tbsp olive oil
  • 1/4 tsp salt
  • 1/2 tsp black pepper

Dressing Ingredients

  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 Tbsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic minced
  • 1 tsp shallot minced
  • 1/2 tsp Sea salt
  • 1/2 tsp black pepper

Optional Salad Ingredients

  • shredded carrots
  • eggplant cut into cubes
  • bell peppers chopped

Instructions

  • Cook the quinoa according to the instructions on the package. Usually, it involves rinsing the quinoa and cooking it in a specific amount of water or broth until all the liquid is absorbed.
  • While the quinoa is cooking, prepare your vegetables. Wash and chop the assorted vegetables into bite-sized pieces. Keep the cherry tomatoes whole.
  • In a large sauté pan, heat some olive oil over medium heat. Add the chopped vegetables (except for the cherry tomatoes) and season with salt and pepper. Sauté the vegetables until they are slightly tender but still retain some crunch (al dente). Remove the pan from heat.
  • Add the cherry tomatoes and the cooked quinoa to the sautéed vegetables in the pan.
  • Mix everything together gently to combine the ingredients evenly.
  • In a separate bowl, whisk together the dressing ingredients.
  • Pour the dressing over the quinoa and vegetable mixture in the pan. At this time you would also add the feta cheese.
  • Mix everything thoroughly to ensure that the dressing coats all the ingredients.
  • Taste and adjust the seasoning if necessary.
  • Serve the quinoa vegetable salad as a side dish to any meal or enjoy it on its own.
  • Note: You can customize the salad by adding herbs like chopped parsley or basil for additional flavor. Feel free to experiment with different vegetables and adjust the dressing ingredients to suit your taste preferences.
