Heat oil in a large skillet over medium high heat. Add the onions and garlic and saute for about 5 minutes until onions have softened.
Add the chopped jackfruit, broth, lime juice and all the spices to the pot and cover. Reduce heat and let simmer until jackfruit softens and about 1/2 the liquid is gone. About 4-5 minutes.
Take a potato masher and smash all the jackfruit up for that shredded texture. Continue cooking until all the liquid is gone.
Turn up the heat and cook until jack fruit gets a nice crisp and color to it.
Warm up your shells and add your jackfruit taco mixture on each tortilla and top with onions cilantro and a squeeze of lime. If you want you can add hot sauce or your favorite vegan sour cream. Serve and enjoy.
