Ingredients

  • 16 oz dry beans of your choice and soaked overnight
  • 4 cups water
  • 1 smoked ham hocked optional but does add maximum flavour
  • 1 small onion chopped
  • 2 small carrots chopped
  • 3 celery chopped
  • 1/4 cup tomatoes purée
  • 2 Tbsp cumin
  • 1 tsp chili
  • 3 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp parsley
  • salt to taste
  • pepper to taste
  • 2 cups rice uncooked washed
  • 4 cups water

Instructions

  • In a crockpot add beans, water, and ham hock and cook on high for 4 hours.
  • After 4 hours add onions, carrots, celery, tomato sauce and spices and cook on low for 2 more hours or until beans are soft.
  • In a pot over medium high heat add washed uncooked rice and water and bring to a boil. Once at a boil either turn off or turn very low and cook for 20 minutes.
  • Serve beans over rice and enjoy!
