  • 2 Tbsp olive oil
  • 3 chicken breast cubed
  • 2 cans black beans drained and rinsed
  • 1 can corn drained
  • 1/2 medium onion chopped
  • 1/2 bell pepper chopped
  • 1 tsp salt
  • 1 tsp pepper
  • 2 Tbsp cumin
  • 2 Tbsp chili powder
  • 1/2 cup salsa your favorite
  • 4 cloves garlic minced


  • Prep all ingredients and heat a skillet on medium high heat with some oil. Add onions and bell pepper and cook until onions become translucent.
  • Add chicken and cook until chicken is cook all the way through. Add in beans, corn, salsa, and spices and cook until everything is well incorporated. Serve over rice. And Enjoy!
